Mid Week Meal Recipes
What to cook for dinner tonight? This collection of mid week meal recipes will provide some ideas.
As tough as it can be at times to find variation, I do find that having set days to cook/eat certain types of food can help not only with budgeting and planning but takes the stress out of the eternal problem of what to cook for dinner. For example: Mondays we try to keep a meat-free night – allocating it as the day for pastas (lasagna, gnocchi, etc), Tuesdays is a rice bowl type dish night with lots of little sides, Wednesday we try to have a take out night or my husband cooks, Thursdays are market day so we’ll always have fresh salmon with a fresh salad or veggies, and on Friday’s we’ll often have a meat dish. On the weekends it’s more of a wild card situation, but our Sunday evenings are generally reserved for a chicken roast.
In terms of mid-week meals, I’ve only included meals that are simple to whip up, and included some recipes for side dishes which I find is often what creates the magic or variation to common dishes, especially if you’re having a piece of fish or meat.

Tip: If you can, cook extra or double quantities so you have lunch sorted the next day or left overs for the next night that you can serve with a fresh salad.
