Soba Noodle Salad
Serves one.
1 portion of Hakubaku Soba noodles
Half a small lebanese cucumber
1 tablespoon of raw spanish onion
1 tablespoon of olive oil
2 tablespoons of coriander
4 cherry tomatoes halved
Salt and pepper to taste
1 small can of smoked salmon (alternatively you can use 3-4 slices of smoked ocean trout or salmon roughly chopped, or half a grilled fillet cubed)
Juice of half a lime
Boil the Soba noodles for four minutes then drain.
Whilst the noodles are cooling cube the cucumber, dice the spanish onion, chop the coriander and cherry tomatoes.
Once the noodles have cooled place them in a bowl, add the veggies, the lime juice and olive oil and toss together with the salmon or ocean trout.
And voila! Your delicious and fresh Soba Noodle Salad is ready to be devoured.
