Pimped Out Garden Salad recipe

I love this salad, so, so much! It wasn’t really intentional when I first made it, I kind of just threw a few things together and ended up with something that has now become a go-to. I’ve called it Pimped Out Salad because at its core it is a garden salad but the addition of the mustard, onion jam and mustard pimp it, to make it explosive (and addictive) in a good way! I hope you like it too.

Pimped Out Garden Salad

Serves 1

 

SALAD

1 medium-large carrot grated

1 small-medium tomato diced

1/4 cup of chopped coriander

1/4 cup of chopped parsley

2 cups of hand torn Spinach

1/4 small Chorizo cut into small edible slices (vegetarians can omit, or substitute for Tofu/Tempeh)

 

DRESSING

Good quality Olive Oil

Mustard and Black Balsamic Cream (alternatively use Balsamic vinegar and mustard)

Onion jam

Salt and Pepper

Juice of one Lime

Add all the salad ingredients together in a bowl and mix through

 

Now add a tablespoon of balsamic cream (or a tablespoon of mustard and a drizzle of balsamic vinegar), as well as a tablespoon of onion jam

 

Add the chorizo, drizzle the salad with Olive Oil, a shake of salt and pepper, lime juice,  and mix through once more

 

Check that you’re happy with the balance of the flavours and add more dressing if you please. If not, your garden salad has been pimped, and is ready to go!
