Watermelon and Radish salad with Feta by Tucker Street
Serves: 4-6 people as a side
Time to prepare: 10 minutes
Oh so refreshing and super quick, this salad can be prepped ahead of time and sit pretty in the fridge until serving time. Tucker Street recommends teaming this with Middle-Eastern marinated BBQ lamb chicken or prawns on the BBQ – easy!
500g watermelon
150g Persian feta (or goats cheese)
4 baby radishes
2 red shallots
1 cup mint
1 cup basil
80ml verjuice
3tbs extra virgin olive oil
Utensils required
chopping board
knife
mandolin
small mixing bowl
serving platter
1. Slice fruit and veggies
Thinly slice the melon and cut into rough triangles. Peel the red shallots. With a mandolin, thinly shave the radishes and red shallots
2. Prepare the herbs
Roughly chop or tear the mint and basil and set aside
3. Prepare dressing
Whisk the verjuice and olive oil in a bowl and season with salt and pepper
4. Arrange salad
Arrange the watermelon on a platter. Crumble the Persian Feta then scatter the slices of radish, shallot and herbs. Finish with a drizzle of dressing just before serving and freshly cracked pepper
