Chilli Pasta

Serves 2-3


1 large palm full of rocket

Half a pack of your favourite pasta (we love Linguine)

Half a brown onion diced

3 cloves of garlic finely diced

1 can of diced tomatoes

4-6 cherry tomatoes halved

1 tablespoon of olive oil

1/2 a teaspoon of chilli sauce (alternatively use fresh chilli and add with garlic and onion)

1 tablespoon of balsamic vinegar

Salt and pepper 



This is our solution to quick, easy pasta when you’re time poor after work and probably starving!


Heat a medium saucepan and add olive oil. When hot, add onion and garlic (make sure you switch heat to low).


When onion and garlic are golden brown add diced tomatoes, cherry tomatoes, balsamic vinegar and chilli sauce. Allow this to simmer for 15-20 minutes or until ready. Taste regularly and add more chilli, balsamic vinegar and salt and pepper to taste.


In the meantime, heat another saucepan with water and once it boils, add the pasta. When the pasta is al-dente, drain.


Add sauce to a serving bowl and top with pasta. Stir together with the rocket leaves and your dinner is served. Enjoy!
