Mango avocado and rucola salad Mango, Avocado and Rucola Salad

Serves 4 – 5

This is a beautifully fresh and flavoursome salad that is perfect for hot summer nights. Minimal ingredients here but their quality and taste make a big impact. Enjoy!

 

2 Thai Mangos

1 Avocado

1 Orange

1 Lime

5 well sized handfuls of fresh rucola (ours was from the garden!)

Salt and Pepper to taste

Olive Oil

Once you’ve rinsed the rucola, grab your favourite salad bowl and make a bed of salad.

 

Start to cut the mango cheeks away and then slice them lengthways to achieve long strips. Fan and arrange them on the bed of rucola leaving some space between each ‘fan’.

Cut half an avocado (this should be all you need), and start to cut it in strips lengthways just like the mango. Once you have enough strips lay them in the spaces between the mango by fanning them out.

 

Cut the orange in half, use the juice from one half and squeeze it over the salad. Cut a few slices from the remaining half and add it to the salad for presentation.

 

Do the same with the lime, cut it in half, use the juice of one half for the salad and cut the remaining half for presentation.

Drizzle some of your favourite olive oil, add salt and pepper and your beautiful Mango, Avocado and Rucola Salad is ready to eat!
