Kladdkaka (Chocolate Fudge Cake)

Kladdkaka is a deliciously sweet and very simple Swedish Recipe by Simone Larsson who authored the piece Fika: the Art of a Swedish Kitchen Tradition. You literally mix all the ingredients for the Kladdkaka together, pop them in a cake pan and in the oven. Enjoy a slice (or two) with a cup of your favourite hot drink and maybe even serve it at your very own fika. Enjoy!
100g butter melted
2 egg
3/4 cups flour
4 tbs cocoa
2 teaspoons vanilla sugar
Oven: 175°
Mix all of the ingredients together.
Butter your cake pan of choice and pour the batter into it.
Heat in the oven for about 20 minutes, remove and allow to cool.
Pop the kettle on and your Swedish Kladdkaka is ready to be devoured!
Notes: The Kladkakka is delicious and sweet enough on its own, however for something extra special you can top it with some fresh berries (like raspberries pictured), and serve it with a little whipped cream on the side. Yum!
