Guacamole
Serves two.
I have refined my Guacamole game many times over the years. This version is by far my favourite. Fresh, flavoursome and super easy to make this Guacamole recipe is great as a snack with corn chips, on toast by itself or with eggs, and just an all-round crowd pleaser. Enjoy!

1 ripe but not ruined avocado – cubed
1 lime or half a lemon
EVOO
Celtic salt
Cracked pepper
3 stems of coriander, diced (save a few leaves to garnish)
1/2 a large tomato – cubed
1-2 rings of spanish onion, diced
1/4 garlic clove, diced
Add the cubed avocado and diced garlic into a small to medium sized bowl. Drizzle with olive oil, add salt and pepper. Mash lightly with a fork but ensure avocado pieces are still firm.
Add the spanish onion, Coriander and tomato and mix through.
Squeeze a little lime or lemon or both if possible.
Add remaining Coriander to garnish, and serve your delicious Guacamole!
