Baked Asparagus with Lemon recipe
There are some recipes that I categorise as ‘barely recipes’, and this baked asparagus with lemon recipe is most definitely one of them. I call them ‘barely recipes’ because they usually only involve one main ingredient, minimal seasoning, preparation and / or minimal cooking time.
Baked asparagus with lemon recipe
Serves two as a side dish
1 bunch of asparagus, washed (500g with ends on)
1/2 a lemon
Quality olive oil for drizzling
Salt and pepper to taste
Preheat your oven to 200°
Meanwhile, place the asparagus in a baking tray, and drizzle with olive oil. At this point I snap the ends off and discard them. If you prefer yours on, go for it!
Zest the lemon above the asparagus in the baking tray so that the zest falls onto the asparagus
Next squeeze the juice of the lemon over the asparagus taking care not to let the pips fall
Finally season the asparagus with salt and pepper to your taste
Using tongs, a fork or spoon try to mix the asparagus around the dish so the oil, lemon juice, lemon zest and salt and pepper are evenly divided
Once the oven has warmed up to 200°, place the dish in the oven and bake for 25 – 30 minutes. The asparagus will have coloured slightly on the top and feel tender when pricked with a fork
Serve warm as a side dish.
