MANDARIN LIME SEMOLINA CAKE side diagonal

This delicious Mandarin Lime Semolina cake is a twist of an Italian classic that my Mum has made many times over the years (the smell of the almond meal while it’s baking in the oven always reminds me of her). The addition of the citrusy juice topping gives the cake just the right amount of moistness and sweetness to make it go down very easily! I like to serve it with a little plain yoghurt and zest, but it goes just as well with some cream (try it with brown sugar whipped through), custard, ice cream, or dusted with a little powdered sugar. Mandarin Lime Semolina Cake 

Serves 8-12

  

CAKE

Oil for greasing cake tin 

200gms unsalted butter

125 gms caster sugar

3 eggs

150 gms semolina

150 gms almond meal (make your own here)

2 teaspoons baking powder

Zest of two large mandarins

Zest of one lime

 

TOPPING

Juice of two mandarins

Juice of one lime

Caster sugar

 

 

Preheat your oven to 180 degrees

Mix the butter and sugar together thoroughly

Add the eggs and mix through

Now add the semolina, almond meal, baking powder and zest

Grease a medium sized cake tin, pour in the cake mixture and smooth the top

Cook for 35 – 45 minutes or until a skewer in the centre comes out clean

Remove the cake from oven and let it cool on a wire rack

Mix the mandarin and lime juice with the same volume of caster sugar and bring to boil in a saucepan

Allow to simmer for 5 or so minutes then remove from pan

Once cool, pour it over the top of the cake which will leave it moist and add a little extra sweetness

Serve with a dollop of plain yoghurt and a little lime zest. Delicious!
