Coconut Porridge with nut butter social media

This has got to be one of my favourite sweet breakfast recipes. Being in Indonesia I have slightly altered the ingredients I use when cooking sweets – namely more coconut cream and dates which are just an amazing combination. This creamy concoction is a great way to break up simple breakfasts and also give you an extra kick in the morning. The additions of the cream, dates and banana also make it that little more filling than normal oats so it should definitely see you through to lunch!

Trust me once you make this you will lie in bed at night hardly waiting for breakfast the next morning.

Coconut Porridge with banana and dates

Serves 2

  

3/4 cup of rolled oats

Water

Coconut Cream

1 chopped banana

4 chopped dates (pre-soaked)

1 teaspoon of cinnamon


Coconut Porridge recipe with bananas

Pour the rolled oats into a medium sized saucepan and cover with water. Turn on the stove to low heat and add the cinnamon to the mixture.

 

As the oats begin to bubble, start stirring slowly and add a hearty drizzle of coconut cream and mix through.

 

Add in the chopped banana and dates and continue stirring. For extra creaminess pour in a little more coconut cream, mix through then serve. So delicious – enjoy!

Tip: 1) For a little extra decadence add a generous teaspoon of nut butter in the centre of the porridge just before serving. It gives the porridge extra flavour that is just divine. 2) This is not just a breakfast recipe, serve it at kids parties in little disposable cups with side bowls filled with toppings so the kids can create their own versions. 3) Make it for dessert and serve it with Coyo coconut yoghurt or even ice cream – yum!!
